Herbs help greatly with cure sickness challenges, which are quite common during town events. Health regeneration bonus is also helpful.
Medics are essential class to keep your fighting characters alive and in full health. They can be replaced by Witches/Sages to certain extent.
While herbs are essential, the herbalist's hut is not, even if you never gather herbs. An expedition traveling with a herbalist will often encounter the common Herbs and Spiders random event and will rarely consume herbs. The primary benefit of a herbalist hut is for villagers to become medics.
